cake for breakfast!

i try to eat healthily, but it’s a bit of a struggle for me.  i have a serious sweet tooth, & it’s always been my downfall.  but i recently discovered something wonderful, & had to share it with all of you – just in case you’re in the same boat!  here it is……

baked oatmeal

baked oatmeal recipe (makes six portions)

100g porridge oats
25g roasted chopped hazelnuts
150g frozen raspberries
50g chopped dates
1-2 apples, peeled & sliced
1 egg
250ml milk

preheat the oven to 190 degrees and lightly grease the bottom & sides of a rectangular baking tin (mine is 26x19cm).  cover the bottom of the tin with the sliced apple.  beat the egg & milk together in a small bowl or jug.  set aside half the nuts, then mix all the other ingredients together in another bowl.

sprinkle the dry mix evenly over the apple slices, then pour the egg & milk mixture over everything (try not to leave any dry bits!).  then sprinkle the nuts you set aside earlier over the top.
cover your pan loosely with foil, just to stop the top from browning too quickly!  bake for 30-35 minutes, removing the foil when you’ve got about 5 minutes baking time left.

once it’s cooled a bit you can slice it up – it will keep in the fridge for about a week.  i tend to make a batch at the start of the week, and eat one slice a day for the rest of the week.  it comes out at roughly 180 calories per portion, and i find it incredibly sweet & cake-like!  but it’s actually very healthy, and hugely filling, especially if you have it with a little yogurt. cake for breakfast?….
